"Could I ditch my pay-TV and still stay entertained?"
I've done it for the last 23 - my whole life. And you know what? I could still give it up. Actually, I pretty much have. Anything on network TV that I'm even remotely interested in is offered online, along with several shows that I don't even get (Hulu/Always Sunny in Philadelphia - the perfect combination). I can watch the online versions whenever I want, and with fewer commercials, too. The only thing I think I've actually sat down and watched in the last month are the Bills games on Sunday afternoons.
I don't need TV for the news. I rarely watch the news anymore; I'd rather read the paper in the morning and check the TV stations' websites later if I want additional sources on anything.
All I want is a killer HT system and broadband. Other than that, I could live without TV 100%. I watch Southpark and Adult Swim Fix online, and other than that, I just watch movies. News is from the web and NPR (*sniffs fart*). TV is junk, expensive junk, just like a lot of things in this country.
