Time machine-esque cataloging of different versions of same file, and better ability to encode searchable meta data such as location would be lifesavers.
As a 2nd gen Ipod Touch owner (+ iPhone 3G owner) this is my wishlist for the touch:

1. better internal speaker. . it's worthless as is, and makes the iPhone's speaker look like a Bose surround system
2. camera
3. 2way airtunes support (not just a controller, but also make the iPod itself a live receiver of AirTunes. . .i'm sure this could be done in a future version of the remote app)
4. GPS. . .though skyhook is good, it'd be nice to have a few MB of local maps loaded and a built in GPS so you could actually use this from driving directions on the go
5. Fix the WPA2 firmware bug. . .it is difficult to impossible to get on to WPA2 networks (extensively documented on Apple discussion forums)

@FunFred - From the people that brought us 1password (Agile Web Solutions), they have "AllBookmarks" - gives you a menu bar item for all your bookmarks (and saved 1password entries!), no syncing. . and its free. http://agilewebsolutions.com/products/AllBookmarks
The still and video use completely different sensors and electronics. . .the Canon XHA1 has 3 1.67 MP CCD sensors, but they make movies with that video camera.

Someone needs to get that video working again asap. . .if for no other reason just so I can try to remix it to the beat of "i think i'm turning japanese"
We all know the MacBook Air can keep a sharp edge, but can you grate cheese with it? Until that day I will still resort to my old fashioned more "traditional" kitchen implements. I hate those crazy Californians.

"What is the best wireless surround sound speaker solution? I have a home theater where running wires is just not feasible. I have my own speakers, so I don't want a system that has speakers with integrated wireless. I've done a far amount of research and have only come across a few companies that even offer a reasonable solution: KEF, Kenwood and Rocketfish. Is there anything else out there? What do you recommend? Thank you!"
